Over medium heat, spread the olive oil in a skillet. Add the peaches and grill until slightly browned. Combine the cheese, cilantro and honey in a bowl. Lightly butter one side of all the bread slices. Place all four slices in the skillet. Divide the cheese mixture in half and spread on two slices of the bread. Cook for three to five minutes until the bread is toasted and golden. Divide the peaches in half and place on top of the melted cheese. Place the other two bread slices on top of the peaches.
